Mud House Swan Sauvignon Blanc 
New Zealand colour Pale straw. nose Intense, powerful aromas of passionfruit and gooseberry with a nuance of lemon grass. palate A full and intense wine displaying powerful passionfruit and guava with underlying lemon and lime flavours. This wine has great expression of fruit and mouth-watering acidity, this leads to a balanced and long finish. comments Each parcel of fruit was carefully monitored during ripening so it could be harvested at optimum maturity in cool conditions. The fruit parcels were then carefully transported to the winery with haste for immediate pressing with minimal skin contact to avoid juice deterioration. The resulting juice was settled before being cool fermented in stainless steel using different selected yeasts to add complexity to the blend and to retain the fresh fruity characteristics from each of the vineyards. The wines were blended shortly after the completion of fermentation and then carefully balanced and prepared for bottling. vineyard region Selected from the Paynter and Stonegate vineyards in the Wairau valley. vineyard conditions A very cold start to the season resulted in low crops and slow maturity. Then the heat of the days arrived, allowing flavours to accumulate whilst the cool evenings maintained fresh acidity and ideal flavours.
