Fermentation : 22 - 25°C in contact with skins for 10 - 12 days, depending on characteristics of grapes Mousse process : With selected yeasts, Lambrusco Grasparossa must and Lambrusco Grasparossa base wine Mousse: Lively, evanescent Appearence Intense ruby red with purple edges Bouquet : Heady, typically perfumed bouquet reminiscent of wines macerated at length on the skins.
