TASTING NOTES 
A wine that truly captures the essence of the variety. Elegant and well structured with layers of fresh fruit, green apple, pear and capers. Well integrated oak flavours with a hint of vanilla pod and roasted cashew nut.
 
IN THE VINEYARD
Cultivar: Chardonnay 100%.
Appellation: Western Cape.
Age of vines: 7 to 9 years.
Irrigation: Drip irrigation.
 
THE HARVEST
The grapes were hand-picked from mid February to end March 2006 with an average yield of 4 ton per hectare.
 
IN THE CELLAR
After whole cluster pressing only the free-run juice was used. 80% was fermented in 225 litre and 500 litre French oak barrels. 20% was fermented in stainless steel tanks and blended back as a fresh component. One-third was matured in new barrels and the remainder in second fill barrels.

Maturation
Matured for 11 months in 500 litre French oak barrels.
 
AGEING POTENTIAL
This wine has an ageing potential of 3 to 5 years from vintage.
 
BLEND INFORMATION
100% Chardonnay.

Recommended with seared tuna steak.
